Seafood Marinara



This delicious seafood marinara is quick and easy to whip up when you don't have time to spend on preparation, need something filling yet not too heavy or just need to impress. Not to mention, it's healthy!

This has became one of my signature dishes, and always leaves a saucy grin on everyones face. I suggest serving some fresh bread on the side for that last bit of sauce on the plate, or even some garlic bread.

Serves: 4
Preparation time: 15 minutes
Cooking time: 40 minutes

Ingredients


  • 1/4 cup olive oil
  • 1/4 cup flat-leaf parsley leaves, chopped
  • 1/2 cup dry white wine
  • 1/2 cup fish stock or water
  • 1 tablespoon tomato paste
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 x 400gm cans italian diced tomatoes
  • 750gm fresh seafood marinara mix

Method

  1. Heat oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring for 3 minutes. 
  2. Add wine and paste. Cook, stirring for 3 minutes or until sauce has thickened. 
  3. Add stock/water and thicken for 3 minutes. Season with salt and pepper.
  4. Add diced tomatoes. Stir and allow to simmer for 15 minutes, or until thickened. Make sure to stir occasionally, and taste! While this is all happening, make sure to cook pasta of your choice in boiling water until al dente.
  5. Add marinara mix and stir through sauce. Place lid on top and leave for 3 minutes or until cooked. While this is happening, drain pasta and mix with a drizzle of olive oil and some of the sauce.
  6. Remove marinara from heat and stir parsley through.
  7. Eat!
